A restaurant robot should be justified by real utilisation. This framework helps you estimate whether a serving robot is solving enough repetitive work to earn its place on the floor.

Step 1: Count real transport trips

For three to seven days, count kitchen-to-table, beverage, bussing and replenishment trips during normal and peak shifts. Separate short trips from long trips. A robot adds more value when the route is repetitive and walking distance is meaningful.

Step 2: Measure minutes per trip

Time a representative sample. Include loading, walking, waiting at congestion points and the return journey. Do not exaggerate. Use an average that reflects actual operations.

Step 3: Estimate transferable work

Not every minute can be transferred to a robot. Guests still need final service, table interaction and exception handling. Estimate what percentage of each trip is genuinely repetitive transport.

Simple monthly capacity formula

Robot-addressable hours = trips/day × minutes/trip × transferable % × operating days ÷ 60

Then compare those hours with the monthly ownership or rental cost and with the operational value of faster service.

Step 4: Add service-value benefits

Restaurants often gain value without reducing payroll: more tables covered during rush periods, fewer delayed dishes, less staff fatigue, faster bussing and more time for guest interaction. These benefits should be measured alongside direct labour capacity.

  • Charging downtime
  • Maintenance and support
  • Staff interventions
  • Route blockage
  • Cleaning and daily setup
  • Training and change management

Decision rule

The robot is attractive when the same route happens frequently, staff time is constrained at peaks and the restaurant can use the freed capacity productively. If the robot would complete only a handful of trips per day, the economics are usually harder to justify.
